Method
1. Heat a wok (shaped pan used in cooking Chinese food).
2. Put the oil in it and heat it.
3. Add garlic and sauté it until it turns brown.
4. After it turns brown color add sliced onions to it and stir.
Now, add carrots, green, red and yellow capsicums.

Add salt to it and toss well.
6. Add cashew nuts, mushrooms, a cup of vegetable stock and soy sauce, then stir well.
7. Chop off the stems and also roughly chop the spinach.
8. Dissolve corn flour in the remaining vegetable stock and add it to wok.
9. Stir it and cook well.
10. When most of the moisture evaporated adds spinach, cabbage, bean sprouts and salt to it. Cook it for 2 minutes.
11. Serve it hot.
12. Seasoned in desirable manner.

Ingredients:
Carrots (sliced) - 2 (medium)
Garlic (crushed) - 2 cloves
Cashew nuts - 7
Leaves of Spinach-7
Green capsicum (cut in triangles) - 1 (medium)
Red capsicum (cut into triangles optional) -1 (medium)
Button mushrooms (sliced) - 5
Yellow mushrooms (cut into triangles) - 1 (medium)
Cabbage (cubes of 1 inch) - ½
Oil - 1 tablespoon
Spring onion (quartered) - 2
Dark soy sauce - 3 teaspoons
Vegetable stock – 11/4 stocks
Corn flour – 2 teaspoons
Bean sprouts – 1/4th cup
Salt – as per your taste
